Louis J. Huber, age 79 of Watkins, MN, died on Friday, February 25, 2022, at Hilltop Health Care Center in Watkins, MN. A Mass of Christian Burial will be held at 1:30 PM on Monday, March 7, 2022, at Church of St. Philip in Litchfield, MN. Visitation will be held from 3:00 - 6:00 PM on Sunday, March 6, 2022, at Church of St. Philip with a 3:00 PM Rosary and 5:30 PM Prayer Service. Visitation will be also be held one hour prior to the service at church. Interment will be held at a later date in Shorewood, MN.
Louis “Lou” John Huber, the son of Louis F. and Isabelle N. (Matchke) Huber, was born on August 4, 1942, in Minnetonka, MN. He graduated from Minnetonka High School in 1960. In his younger days he enjoyed working on race cars at Raceway Park in Shakopee. He proposed to Carole on Valentine’s Day and they were united in marriage on September 17, 1999. Lou was a member of Church of St. Gertrude, and later Church of St. Philip and Darwin Knights of Columbus.
Lou farmed at home with his dad and continued to farm on his own farm in Watkins. He was a heavy equipment operator for various companies before starting Huber Trucking Company with his brother Robert. In addition to being a full time farmer, Lou worked for Riebe Sod for several years and the Meeker County Highway Department for 21 years. He was Santa Clause at Turk’s Tree Farm for many years and enjoyed hunting, fishing, and going to auctions.
Lou is survived by his wife, Carole Huber of Watkins; son, Louis Huber of Watkins; step-sons: Richard Pitts of Kingston and William (Cindi) Pitts of Monticello; six grandchildren: Bandit Bo, Jake, Josh, Nicole, Robin, and Caitlin; six great-grandchildren: Ryann, Gunnar, Macie, Lane, Beatrix, and Hunter; sister-in-law, Barbara Huber of Minnetonka; and many nieces and nephews.
He was preceded in death by his parents, Louis and Isabelle; brother, Robert Huber; sister, Jane Trusty; and two nephews: Patrick Huber and Robert “Bobby” Huber.
